5-Minute Cottage Cheese Bundt Cake

Dreamy soft texture, yet moist and rich with cottage cheese. It doesn’t dry out, not overly sweet, and it’s heavenly whether served hot, warm, lukewarm, or cold. Saying it takes five minutes to mix is almost an exaggeration—it’s even quicker! It’s the perfect solution when you’re craving something sweet, visiting friends, or need a quick homemade treat for a potluck.


5-Minute Cottage Cheese Bundt Cake
Equipment
- 1 Bundt cake pan
- 1 Small bowl
- 1 Large mixing bowl
- 1 Hand mixer
Ingredients
- 250 g Butter
- A pinch of salt
- 250 g Cottage cheese
- 160 g Sugar
- 2 Eggs
- 250 g Flour
- 1 packet Backing powder 12g
Instructions
- Preheat the oven to 180°C (350°F).
- Mix the margarine with the pinch of salt, sugar, and cottage cheese using a hand mixer.
- Add the eggs, then mix in the flour and baking powder.
- Smooth the batter into a Bundt cake pan (if it's not a silicone mold, make sure to grease and flour it well before pouring in the batter).
- Bake until a toothpick inserted into the center comes out clean.
- After a minute or two of resting, carefully turn the cake out of the pan while it’s still hot.
- Dust with powdered sugar before serving.
Notes
You can lightly melt the butter to make it easier to work with, but don’t let it melt completely.
For me, baking time was about 50 minutes, but make sure to always check with a toothpick test.
Tip for serving: Let the cake cool completely before dusting with powdered sugar, so it doesn’t melt into the surface.
